Here is how you make Gluten Free Tortellini from scratch:

Start with the dough1. In a large bowl, mix together the gluten free flour and xanthan gum evenly. 2. Make a well in the middle of the flour mix and crack and egg into the well. Use a fork to break the yolk and start mixing into the flour mix. The mixture will become light and sticky. 3. Dust your counter or a cutting board with flour. Knead the dough for 2 - 3 minutes until you get a smooth ball of dough. 4. From here you can either run it through a pasta roller or roll it out with a rolling pin evenly. Forming the Tortellini1. Using a 3-4 inch round cookie cutter, cut out pieces for each piece of tortellini. If you do not have a cookie cutter, you can use a glass and place it upside down into the flat dough.2. Break 1 egg into a bowl and mix it with a fork. Use another bowl to mix the cheeses.3. Take your first piece of cut out dough and brush the edges lightly with egg yolk. 4. Place about 1/3 teaspoon of cheese mixture onto 1 half of the piece. Fold the other half over and pinch the edges together lightly. 5. The tortellini should be in a half circular shape by now. From here take the two corners and curve them in toward each other. Pinch together and add a little bit of egg to help it stick. 6. Repeat steps 3-5 with the rest of your dough and cheese.
