Steak seasoning blend

* 1/4 cup white wine vinegar
* 1/4 cup olive oil
* 1/2 tablespoons yellow mustard
* 1/2 tablespoon beef base or dissolve 1 bouillon cube in 2 tablespoons of boiling water
* 1/2 tablespoon garlic salt
* 1/2 tablespoon chili powder, such as ancho
* Freshly ground black pepper

Basting glaze

* 1/2 cup orange juice, freshly squeezed
* 1/4 cup lime juice, freshly squeezed
* 1 1/2 tablespoons sweet onion, chopped
* 1/2 teaspoon ground coriander
* 1/2 teaspoon ground cumin
* 1 tablespoons garlic, chopped
* 2 tablespoons light brown sugar
* 1 tablespoons melted butter

Here is how you make Pounded and Grilled Flank Steak with Mojo Glaze:

PreparationYou will need a plastic resealable bag, paper towels and canola oil.Add all the ingredients for the seasoning blend into plastic resealable bag. Add the steaks, reseal the bag and hit the steaks with a rolling pin about 10 times on each side to "bruise" the steaks.Set clean, well-oiled grill or grill pan on a medium-high heat. Remove steaks from the bag and lightly dry with a paper towel. Brush with canola oil.Combine all the ingredients for the basting glaze in a grill-safe bowl or pan and keep warm on the grill or burner. Place the steaks on the grill or pan with the lid open and do not move the steaks until they are well-marked and lightly charred, about 2 minutes. Flip the steaks. Keep the lid open and repeat on the second side, grilling for 2 minutes.Baste the flank steak with glaze.
