This is a great meal for a crowd. Each serving is calculated as 2 enchiladas. This recipe will make 20 enchiladas total. I did not use any low fat ingredients and this recipe can be modified to be lower in calorie. This dish gets even better when warmed up for left overs! What Are The Ingredients For Mom's Homemade Enchiladas Recipe?The ingredients for Mom's Homemade Enchiladas are: 1.5 Lean Ground BeefOne can Enchilda Sauce (I prefer medium) One small can tomato sauce One can of large pitted black olives One small can of chopped black olives 7 cups of Mexican Mix cheese 20 Corn Tortillas One Onion Water How Do I Make Mom's Homemade Enchiladas?Here is how you make Mom's Homemade Enchiladas: Pre heat oven to 350 degreesIn a frying pan, brown ground beef, onion and chopped olives.While ground beef mix is browning, mix enchilada sauce and tomato sauce in a large sauce pan. Fill the enchilda sauce can with water and add to sauce mix. Bring to a boil and then turn down to a simmer.Take 3 cups of cheese and separate into a bowl. This will be used in side of the enchiladaOnce ground beef and sauce mix is ready, use a 9x12 baking pan. Dip one tortilla shell into the tomato sauce mix for 10-15 seconds, use fork to retrieve and place in the 9x12 pan. Add a large spoon full of ground beef and cheese and roll corn tortilla. I roll about 6 enchiladas in a row and then take the top two and turn sideways in the pan. Continue to fill the pan up, I usually get 15 in a pan. I then use a smaller glass baking dish about 5x6 and complete the last 5 enchiladas. Once they are all rolled, if there is any remaining ground beef, spread over the top of the pan. Take the sauce mix and pour equally over the entire dish. Add the remaining 4 cups of cheese spread equally over both dishes.
