I love making homemade fries!! And this recipe is easily adapted for any number of people - Depending on the size of the potato, I usually make 1 potato per person & adjust the Olive Oil as necessary. They are espeically good if you have a flat stone to bake them on - they cook evenly without having to turn them.I don't really know how this does on a metal pan because I don't use them.
