3 Cups V8 Low Sodium (divided)
3 Yukon Gold Potatoes (cut into approx. 1" peices)

Here is how you make Leslie's Homemade Meatloaf and Vegetables:

Preheat oven to 375 degrees.1. Crush crackers into nearly dust.2. Mix together ground turkey, egg substitute, ketchup, chopped onion, 1/2 cup of V8 Juice and crushed crackers. In a large casserole dish form meat mixture into a loaf leaving room on each side to add vegetables.3. Add potatoes and carrots on both sides of loaf and pour 2 cups of V8 Juice over them.4. Pour remaining 1/2 cup of V8 Juice over meatloaf. Cover with tin foil.5. Bake at 375 degrees for 90 minutes - 2 hours.Cooking Note: Stir vegetables about half way through cooking time. Remove tin foil for last 15 minutes.
