Spray a large, deep sauce pan or skillet with cooking spray. Saute the onions on medium high heat, then add the other vegetables and saute for about 5 minutes. Meanwhile, combine honey, oil, mustard, ground ginger, soy sauce, and garlic in a small bowl. Stir until mixed. Add the turkey sausage to the skillet of vegetables and cook until heated through. Add the sauce and cook until hot and bubbly.
