I developed this recipe (and others) for friends who celebrate Chanuka. Sprinkle with salt and flour. Mix thoroughly with a fork. Beat the eggs lightly. Add to the vegetable mixture and mix well with the fork. Let rest about 30 minutes. When ready to cook, heat pan on medium heat. When hot add 1tablespoon of the oil. Put 4 latkes using a 1/4 cup measure into the pan. Cook until crispy on both sides. Hold in a 200 degree oven until served. Repeat the same process twice more for a total of 24 latkes. Makes 8 servings of 2 latkes each.
