1 clove garlic, crushed
Finely grated rind and juice of 1/2 lemon
Salt and freshly ground black pepper

3 medium courgettes
1 medium green pepper

Here is how you make Snapper kebabs:

Cut each snapper fillet in chunks. Mix together the oil, garlic, lemon rind and juice, seasoning and Tobasco in a small bowl.Put the chunks of fish into a shallow dish and pour over the lemon and oil marinade. Cover the dish and leave to stand in a cool place for at least 2 hours.Cut the courgettes into 5mm slices. Cut the peppers in half lengthways and remove the core and seeds. Chop the pepper flesh into 2.5mm squares.Carefully thread the marinated fish fillets onto kebab skewers, alternating these with pieces of the prepared vegetables.
