What Are The Ingredients For Cheesy Eggplant Lasagna with Noodles Recipe?The ingredients for Cheesy Eggplant Lasagna with Noodles are: 1 medium sized eggplant (about a pound)4 tablespoons egg whites 2 tablespoons Minced or fresh garlic 1 lb. extra lean ground beef (96%) 1 cup 2% cottage cheese 3 cups pasta sauce of your choice (I used Victoria All Natural Tomato Basil Red Sauce) 12 pieces of lasagna noodles (I used Heartland Gluten Free Lasagna) 1/2 cup water 1/2 a large white onion (160g) 1 cup shredded fat free mozzarella 1 cup shredded 2% mozzarella 4 tablespoons reduced fat parmesan cheese How Do I Make Cheesy Eggplant Lasagna with Noodles?Here is how you make Cheesy Eggplant Lasagna with Noodles: Preheat broiler. Spray a baking sheet with pam or olive oil. Cut eggplant lengthwise and thin and place on baking sheet. Spray with pam or olive oil and season with salt and pepper. Broil eggplant for 4-6 minutes. Watch closely or it will burn. Flip and broil the other side for a couple of minutes. Remove from oven and set aside.Set oven to bake at 350.Chop onion and saute in pan with garlic until soft and caramelized (about 5 minutes on medium-high heat). Set aside. Cook the beef and drain the fat. Put back in pan and add the cooked onion with garlic. Add the jar of spaghetti sauce. Add 1/2 cup of water to jar and add to the meat sauce. Put on low heat and allow to come to a low boil. Combine cottage cheese, 1/2 cup fat free mozzarella cheese and 1/2 cup 2% mozzarella in a bowl. Add salt, pepper and garlic to taste. Add 4 tablespoons of all whites. Set aside.Spray glass baking dish with pam. Put about a cup of meat sauce on the bottom followed by the eggplant. top with cheese mix, 6 pieces of uncooked lasagna, meat sauce, 6 lasagna, cheese sauce, and meat sauce. Put remaining cheese on top, along with some parmesan and salt and pepper. Cover with foil that has been sprayed with pam. Bake for 45 minutes at 350. Remove foil and bake another 10 minutes.
