Drain and set aside. Saute garlic, onions, peppers, mushrooms and zucchini until tender. Add to chicken and set aside. Mix ricotta, cottage cheese and half the parmesan together and set aside. Spray 9" x 12" deep-sided baking dish with cooking spray. Spread 1/4 of the sauce in the bottom of the pan and build layers using 1/4 of the sauce and 1/3 of the other ingredients for each layer as follows: 3 noodles, meat/vegies, sauce, mozarella, 3 noodles, cheese mixture. Repeat twice. Top with 3 noodles, remaining sauce and remaining parmesan. Loosly cover with aluminum foil. Bake at 375 degrees for one hour. Cut into 3" x 3" pieces.
