Brown in large saucepan in olive oil; add sausage or any other very lean meat or no meat at all. Add 2 cans of crushed tomatoes or canned tomatoes or puree. Add spices. Simmer the sauce.Start 6 quarts of water to boil in a large saucepan, covered.The filling: In a food processor, combine 1 egg, the ricotta cheese, tofu and parmesan cheese. Whir until smooth. Partly thaw frozen greens & chop up fine. Then squeeze relentlessly until the liquid is mostly extracted. Add to the filling & mix by hand. Meanwhile, if your water has come to a boil, put in lasanga noodles to cook. I use 16 noodles for a 10 x 15" pan. Cook 10-15 minutes with cover ajar so they don't boil over. Drain in colander.Create layers as follows:1/3 of the sauce at the bottom of the pan.1/2 the noodles, overlappingAll of the filling1/3 the sauce.The rest of the noodlesThe rest of the sauceA sprinkling of parmesan cheese (1 1/2T)Cover with aluminum foil and bake at 375 for 35 minutes; then uncover and bake another 10 minutes.
