A healthier alternative to traditional lasagna. I created it from 2 of the vegetables I had ripe in my garden late this summer and actually cooked it on the grill! Tastes just as good in the winter. What Are The Ingredients For Lasagna w/ Chard and Eggplant Recipe?The ingredients for Lasagna w/ Chard and Eggplant are: Lasagna Noodles - Dreamfields OR whole wheat OR any other high-fiber, whole grain pastaTomato Sauce - 2 15 oz cans Foster Farms Lean Ground Turkey, 16 oz Olive Oil, 3 tbsp Eggplant, fresh, 2 cup, cubes Swiss Chard, fresh, 2 cup, chopped Basil, 5 leaves Parsley, 2 tbsp Garlic, 3 cloves *Fennel seed, 1 tbsp Cottage Cheese, 2% Milkfat, 2 cup (not packed) Egg, fresh, 2 extra large Mozzarella Cheese, part skim milk, 16 oz Parmesan Cheese, grated, .5 cup How Do I Make Lasagna w/ Chard and Eggplant?Here is how you make Lasagna w/ Chard and Eggplant: To Make Sauce: Cook ground turkey with fennel seeds and garlic. Lightly salt at end of cooking and drain. Place tomato sauce & basil & oregano into a small saucepan... cook over med/low heat until flavors blend (approx 15-20 mintues).Cook the Veggies: Sautee eggplant and onions in olive oil until soft, add chard at end to wilt. Make Cheese Filling = mix together the cottage cheese, eggs, parmesan (about 1/4 cup) parsley and a little bit of pepper.Put a thin layer of sauce on the bottom of the pan. Then Layer noodles, sauce, meat & veggies, cheese filling and grated mozz. repeat 3 times (you'll need 12 noodles). Top final layer w/ sauce and mozz and the last of the parm.Bake at 375 for about 20 min.
