Mix all the cheeses, spices, and egg substitute.Spray ramekins with cooking spray. Put half the tomato sauce in the bottom of the ramekin. Layer half the polenta slices on top.Saute onion, garlic, and zucchini in a pan with cooking spray. Add one tbsp of water to the mixture and cover to steam the zucchini. Add other half of the tomato sauce.Put half the the veg/sauce mixture over the polenta in the ramekins, then add half the cheese mix.
