12 Lasagna Noodles (12 oz)
2c Tomato Sauce
1/2c Water
6oz Part-Skim Mozzarella, shredded
2oz Asiago, shredded

Layer 1 Filling:
6c Mushrooms, sliced
1/2c Shallots, sliced (substitute onion, if needed)
2T Olive Oil
2T Marsala Wine
Salt to taste

Layer 2 Filling:
8oz Lean Ground Beef
1c Onion, chopped
14.5oz Diced Tomatos
1t Montreal Steak Seasoning
1/4t Cayenne Pepper (to taste)

Layer 3 Filling:
2, 10-oz packages Frozen Spinach
5 cloves Garlic, pressed or diced
2c Part-Skim Ricotta
2 Eggs
2T Dried Parsley
1/4t Nutmeg
Salt and Pepper to taste


How Do I Make Cheater's Lasagna?

Here is how you make Cheater's Lasagna:

Prep FillingsNote: The three fillings are cooked separately, so you can use the same frying pan over an over - fewer dishes to wash!Layer 1:Saute mushrooms and shallots in olive oil until they begin to caramelize - all "mushroom juice" should be evaporated. De-glaze pan with Marsala and season with salt and pepper, to taste. Set aside.Layer 2:Brown ground beef and onion until all pink has disappeared and onions are tender.Stir in diced tomatoes.Season with Montreal Steak Seasoning and cayenne pepper; saute until excess liquid has evaporated. Set aside. Layer 3:Defrost spinach and saute, briefly, with garlic, just until excess liquid has evaporated.Season with salt and pepper, to taste.Set aside.Thoroughly combine ricotta, eggs, parsley and nutmeg.Preheat oven to 350 degrees. Assembly:In bottom of 13x9" lasagna pan, spread 1c tomato sauce, diluted with 1/4c water.Lay 3 lasagna noodles, lengthwise on top of sauce.Layer mushroom mixture on top of noodles.Sprinkle with 3oz shredded mozzarella and 1oz shredded asiago.Lay 3 lasagna noodles over mushroom mixture.Layer beef mixture on top of noodles.Lay 3 lasagna noodles over beef mixture.Spread ricotta mixture over noodles.Spoon spinach mixture over ricotta.Lay 3 lasagna noodles on top of spinach mixture.Dilute remaining 1c tomato sauce with remaining 1/4c water; pour evenly over top of lasagna."Lasagna-Sandwich" Baking Method:Place lasagna pan on top of a 15x11" jelly roll pan. Place in oven. Fill jelly roll pan with water (around the base of the lasagna pan). Invert a second jelly roll pan over the top of the lasagna pan.Bake 1 1/2 hours, or until noodles are tender.Garnish with remaining 3oz mozzarella and 1oz asiago, and bake until cheeses melt.12 hearty servings - serve with a salad!Leftovers freeze very well, especially in individual bags.
