Preheat oven to 375 degrees and on the stove cook 9 lasagna noodles according to the directions on the box. Set the noodles aside. 2. In a food processor, shred 8 sticks of celery, 4 carrots, 1 onion and 1 head of broccoli. Cook with a few smashed cloves of garlic and 4 bay leaves in olive oil over medium heat, for 10-15 minutes, until it starts getting golden. Set aside. 3. Combine 15 ounces of ricotta with 2-1/2 cups of shredded cheddar and 1 cup of shredded mozzarella and mix well. Set aside 1/2 cup of shredded cheddar without mixing it in to the rest. 4. Obtain two large jars of spaghetti sauce. Spread about 1/2-3/4 cup of spaghetti sauce on the bottom of a greased lasagna pan. Set aside about 1/2 cup. 5. Create two layers of: 3 lasagna noodles, half the veggie mix, half the sauce, half the cheese. 6. Put down the final 3 lasagna noodles, top with the sauce that you set aside, and then sprinkle the cheese you set aside on top. 7. Cover with foil and cook at 375 degrees for 30 minutes. Remove the foil and cook for another 10 minutes. Remove from oven and cool for 10 minutes before eating.
