Brown the mince in a large non-stick saucepan over medium-high heat.Add chopped carrots, zucchini and mushrooms. Add the tomato soup, water and the tomato paste. Bring to the boil then reduce heat to low. Simmer uncovered for 30 minutes or until thickened.Preheat oven to 180C. (356 F.) meanwhile place the spinach in a large heatproof bowl.Pour over enough boiling water to cover. Leave for one minute, then drain. Leave to cool.Spread a small amount of the meat mixture over the base of the baking dish. Place over half the lasagne sheets (cut sheets to fit dish). Spread over the meat mixture, top with the remaining lasagne sheets. Scatter over the spinach and basil, crumble over the ricotta, and sprinkle with parmesan.Bake for 35-40 minutes or until golden.Set aside for 5-10 minutes before cutting into slices.
