What Are The Ingredients For Millet Loaf Recipe?

The ingredients for Millet Loaf are:

1 cup millet
2 1/2 cups water
1 cup chopped onions
1 cup shredded or chopped carrots
1 cup chopped celery
1 1/4 tsp salt
1/2 tsp minced garlic
1/2 tsp dried cumin
2 Tbs olive oil
1/2 to 1 cup sunflower seeds, toasted (or any nuts or seeds you have on hand)

Oil a large loaf pan and set aside
Rinse Millet and put in large saucepan with water, onions, carrots, celery, salt, garlic and cumin. Bring to a boil
Cover and reduce heat to medium-low. Simmer for 30 minutes
Remove from heat and let stand 10 minutes.
Stir in the oil and nuts or seeds and mix well. Spoon the mixture into the pan, pack it down firmly.
Place on cooling rack and let rest at room temperature for 15 minutes.
Carefully turn onto cutting board or whatever you want to serve it on. Cut into slices and serve.

This is great with potatoes and salad or with a serving of vegetables and a salad. My husband likes to sprinkle parmesan cheese over the top of it. It is also great as leftovers - it is so moist and keeps really well in the fridge. You can also mix up whatever spices you would like, I like the taste of cumin, but thyme or rosemary or curry would work as well.
