Preheat oven to 350.Boil water in a large pot; add manicotti shells and continue to boil about 7-8 minutes (they should still be firm; they'll finish cooking in the oven). While shells are cooking, combine ricotta, 3 cups mozzarella, egg, and herbs; blend well. Prepare a baking dish (11x15 works well for 14 shells) by pouring 1 cup of sauce in and spreading to coat the bottom. When shells are done, remove from water and stuff each shell with about 1/4 cup of the cheese mixture. Place in baking dish and pour remaining sauce over stuffed manicotti. Top with remaining mozzarella and sprinkle parmesan cheese over the top.
