2 tbsp extra virgin olive oil
1 medium onion, finely minced or pureed
1 28 oz can whole peeled tomatoes with liquid
1 6 oz can tomato paste
2 tsp dried basil
1 tsp dried oregano
1/2 tsp dried red pepper flakes
1/3 cup Orange puree (see recipe instructions)
1/3 cup White puree (see recipe instructions)
1/2 tsp salt
fresh ground pepper to taste


How Do I Make Marinara Plus?

Here is how you make Marinara Plus:

Orange puree:3-4 medium to large carrots, peeled and cut into chunks1 sweet potato or yam, peeled and cut into chunks2-3 tbsp waterWhite puree:2-3 small to medium zucchini, peeled and cubed1/2 head cauliflower flowerets, steamed1/2 tsp lemon juice2-3 tbsp waterFor the Orange puree: Cover vegetables with cold water and boil for 20 minutes. Drain and remove to food processor. Puree until smooth, adding up to 3 tbsp water to make it smooth. Use as little water as possible. Will keep in the fridge for three days and will freeze well.For the White puree: Add steamed cauliflower, raw zucchini, and lemon juice to processor. Puree until smooth adding up to 3 tbsp water to make it smooth. Use as little as possible, will keep for three days in fridge or freeze.Marinara:Heat oil in a deep saucepan over medium heat. Add onion and garlic and cook until onions are slightly translucent but not brown. Mix in tomatoes, tomato paste, basil, oregano, red pepper flakes, Orange puree, and White puree. Bring to a boil, lower heat, and simmer 15-20 minutes until sauce thickens. This next step is optional. It depends on how suspicious your family is of vegetables.Transfer to blender in batches and blend smooth. Fill blender no more than half way at a time. Stir in salt and several grinds of pepper. Use immediately or cover and store in refrigerator for up to one week. Freezes for up to six months.Vodka variation: Follow instructions above except add one 5 oz can of evaporated low fat milk and 1/4 cup of vodka to the sauce. Blend until smooth and simmer 5 minutes to thicken and boil off alcohol. Puree as described above if desired.Makes at least 4 cups.
