Preheat oven to 200 degrees Celsius (350 deg fahrenheit). Line 2 trays with baking paper and lightly spray with olive oil.2. Grate the sweet potato, carrot, zucchini and onion into a large bowl. 3. Squeeze excess liquid out of vegetables and transfer back to the bowl.4. Process the bread or oats in a food processor or blender to make fresh breadcrumbs. Add breadcrumbs or ground oats to bowl with shredded vegetables.5. Add in minced turkey/chicken, egg whites, lemon juice, cinnamon, mint and parsley. Season with salt and pepper.
