Remove from heat and set aside.Put the ground beef into a mixing bowl. Add the eggs, Greek seasoning and mix. Next mix the onion and garlic, hopefully they have cooled a little. Now thoroughly mix the all the ingredients in the bowl until the mixture seems pasty or sticky, not sloppy anymore. At this point I would put it in the refrigerator for about half an hour.To measure out the meatballs I use a 2oz scoop, doing that gives me exactly 12 meatballs. If you do not have a two ounce scoop, you could put the meat on a sheet pan, make a large log out of it and divide it equally into 12 meatballs. After I size the meatballs I then pack and roll them between the palms of my hands to try to get them as round a possible.Next in I heat a skillet, then put the meatballs in. I do not touch the meatballs until they start showing that they are cooking. You should notice that they are starting to cook on the bottom.I will then check one and turn it when I think it is browned, if it is not browned I put it back until it does. When browned I turn them all over. If at this point you notice that they have not all browned then it may be because your pan is hotter on one side then the other. I find that if I turn my pan on the stove 180 degrees about every 5 minutes, because my stove cooks uneven, that definitely helps even out the cooking.Continue cooking and turning on different sides until they are browned, mine took about 30 minutes.
