This is an old family favorite, somewhat high in fat and sodium as written, but it can be adjusted by using sodium free catsup, egg substitute, less pork, or very lean, or replaced with more ground beef. The bacon can also be eliminated if desired. The flavor is so great, we'd rather make the adjustments than give it up entirely!!

1 large egg, or egg substitute
3 slices dry bread, soaked in water and squeezed out
3 slices bacon

Here is how you make Meatloaf Supreme:

Mix the beef and pork together, if using pork. Add all remaining ingredients except the bacon. Mix well; clean, bare hands works best (the old fashioned way. I told you it was an OLD recipe!) Place one slice of bacon in bottom of large loaf pan, place meat mixture in, and place two slices of bacon on top of meat. Bake at 350 degrees until it starts to brown, then turn oven down to 250 degrees until done, no longer than 1 1/2 hours.
