1 cup tomato sauce
1/2 cup plain dried bread crumbs
2 egg whites, lightly beaten (or 1/3 cup egg beaters)
1 tsp. dried basil
1 tsp. salt (opt)
1/4 tsp freshly ground pepper
3 chipotle peppers in adobe sauce, minced

Preheat oven to 350F. Spray a large rimmed baking sheet with nonstick spray.Meanwhile, heat 1 tsp of the oil in a medium nonstick skilet over medium-high heat. Add the onion, garlic and sugar; cook, stirring occasionally, until golden, about 10 minutes.Transfer to a large bowl. Heat the remaining 1 tsp oil and add the mushrooms, stirring occasionally, until browned, 6-7 minutes. Add to the bowl with the onion; let cool 5 minutes.Stir in the turkey, 1/2 cup of the tomato sauce, the bread crumbs, egg whites, 2 chipotle peppers, basil, salt, and pepper until well combined.Transfer the mixture to the baking sheet and form into a 4 x 9-inch loaf. Mix the remaining 1/2 cup tomato sauce and chipotle pepper and spread over the top of the meatloaf. Bake until an instant-read thermometer inserted in the center of the loaf registers 160F, 45-55 minutes. Transfer the meatloaf to a cutting board and let stand about 10 minutes.
