1 pound lean ground beef
1 T Dijon mustard

2 eggs, slightly beaten
1 T Maderia or Marsala wine

How Do I Make Connie's Meatloaf?

Here is how you make Connie's Meatloaf:

Preheat oven to 375?. In a small bowl, combine oats and milk. Set aside. Saut? onion, garlic, shallot and pepper in olive oil and butter in a medium sized skillet until soft. Add the thawed spinach. Stir until all moisture has evaporated. Set aside to cool. Combine turkey and ground beef in a large mixing bowl and add all spices and oat and milk mixture, eggs and spinach/onion mixture. Mix. Sprinkle with the wine and mix well. Place in a loaf pan. Be sure to fill bottom corners. Smooth the top and sprinkle with the thyme leaves.
