2 pounds ground chuck or round

1 pound ground turkey
17 saltine crackers (unsalted tops) crushed small
1 cup Celery chopped small
1 cup Onion chopped small
1 egg large
4 cans tomato sauce
4 cans water
Salt and pepper to taste


How Do I Make Joyce's meatloaf?

Here is how you make Joyce's meatloaf:

Makes 16 3 oz portions, but saves well for sandwiches and leftovers. Also makes a good meatball recipe.Preheat oven to 350 degrees.1) Combine ground chuck and ground turkey in large bowl2) Add onions, celery, egg, cracker crumbs, and salt and pepper. If your family likes other spices or veggies this would be the time to add it.3) Mix all ingredients--good job for kids who like to get their hands messy. Squish together well.4) Shape into loaf in a deep sided roasting pan. Don't elevate on a rack, if you use the chuck/turkey combination there isn't that much fat, and you need to cook it in the sauce.5) Pour 2 cans of Tomato sauce over the meat loaf--it will spill over into the pan.6) Add 2 cans of water into the pan around the meat loaf, mix it with the tomato sauce.7) Put into oven at 350 degrees F. 8) After 1 hour, check meat loaf, it should be starting to dry the sauce and much of the water/sauce will have evaporated. Add one (1) can of tomato sauce over the meat, and one more can of water around the meat.9) After the first hour, check every 15-30 minutes, basting with the sauce. Add last can ( in the same way) about 2 hours in.10) After 3 hours remove the pan from the oven, drain or soak up excess grease with a paper towel. Move meatloaf to serving platter, serve sauce along side of this. My husband likes mashed potatoes and green beans with this meal, you can use the sauce as a great gravy for the potatoes, either as is or thickened with your favorite thickener (if needed).Number of Servings: 16Recipe submitted by SparkPeople user TWILIGHTMOM.
