1/4 cup onion, chopped
2 tablespoons extra virgin olive oil
8 oz can tomato sauce
pepper and oregano to taste

Preheat oven to 350. Combine all the meatloaf ingredients in a bowl. Make sure to mix thoroughly. Pack into an ungreased 8 1/2 x 4 1/2 x 2 1/2 in loaf pan. Bake for 1 hour and 15 minutes. Let sit for 5 minutes. When the meatloaf is almost out of the oven make the sauce as follows. Brown the onions in the bottom of a sauce pan in the olive oil. Add the tomato sauce.
