Here's my most recent take on meatloaf, with mushrooms, onions, celery and carrots to boost flavors and reduce cholesterol and calorie counts. I use Catelli's Meatball and Meatloaf mix, but for the sake of this recipe, have entered the information as 7 ounces each of beef, pork and veal.I adapted several recipes to come up with this one, among other things, I wanted to reduce the sodium, fat and cholesterol for the recipe as a whole, so I didn't have to feel guilty about feeding my family meatloaf. What Are The Ingredients For Meatloaf with Vegetables Recipe?The ingredients for Meatloaf with Vegetables are: 1 1/4 pounds meatloaf mix (I use a package of Catelli's pre-blended, but use 7 ounces each of lean beef, pork and veal if you'd prefer, it's how the info is entered for this recipe)2 Tablespoons Extra Virgin Olive Oil 16 ounces mushrooms, diced 2 onions, diced 3 ribs celery, sliced 1 carrot, sliced 1/2 cup Swanson's reduced sodium chicken broth 1/4 cup white wine 1 tsp Knox unflavored gelatine 1 egg (large) 4 ounces Mozzarella 2 Tablespoons Parsley 1 tsp ground thyme 3 cloves garlic 2/3 cup Panko bread crumbs Black pepper How Do I Make Meatloaf with Vegetables?Here is how you make Meatloaf with Vegetables: Makes about 14 servings(Sauteing the vegetables takes about 30-40 minutes altogether, you want them to be tender and golden to give the recipe extra flavor.)Saute the diced onions, celery, and carrot in half the olive oil, til tender and golden. Add the parsley, thyme, garlic, and stir to combine, cooking briefly. Remove to a separate bowl. Put the mushrooms in the same pan, add the second tablespoon of olive oil and saute til they've released their juices and are golden. Remove to the bowl with the other vegetables, and let cool. When cooled, put them in the food processor and grind together. Return to the bowl and let rest for a few minutes.Put the gelatin in the chicken broth to soften, for about 15 minutes, and warm in the microwave about 30 seconds, then stir to dissolve. Deglaze the pan with the broth, gelatin and the wine. Cook the liquids way down until dark and syrupy. Combine with the ground up vegetables and stir. Add the egg and blend.Grind the mozzarella in the food processor, and remove to a bowl. Add the panko crumbs to the cheese, and combine. Blend with the ground meats. Combine the vegetable/broth/egg mixture with the meats/breadcrumbs/cheese mixture. Season with black pepper, if desired. Prepare a cooking rack with aluminum foil, and pierce the foil so the juices can drain away. Place in a baking sheet, then add the meatloaf mix on top. Bake at 350, uncovered, until browned, about 50 minutes. If you prefer, you can portion the uncooked meatloaf mix and freeze it in batches for cooking later.
