Here is how you make Zesty meatloaf with vegetables:

Preheat oven to 450 F. In a large metal or glass bowl, mix ground beef, egg, bread crumbs, diced onion, diced sweet peppers, curry powder, black pepper, and 2 tbsp of the soy sauce together. Put in large roasting pan, form into a loaf shape. Place baby or sliced carrots, potatoes (cube them), and onion (slice or cube) around the meatloaf. Mix six cups water with condensed tomato soup. Pour over vegetables and meatloaf. The top of the meatloaf should just stick up above the soup. Drizzle remaining 2 tbsp soy sauce over the meatloaf. Cover roaster with roaster lid or aluminum foil. Roast for approximately 45 - 60 minutes, or until meatloaf reaches 165 F when tested with a meat thermometer and vegetables are tender.
