Choloula Sauce (pepper sauce) 1/3 cup shredded reduce-fat Monterey Jack Cheese How Do I Make Mexican Manicotti?Here is how you make Mexican Manicotti: Cook: shells according to instructions on box.Place in a small bowl: cooked and chopped chicken breast, 1/4 c. salsa, cottage cheese, sliced olives, chopped cilantro, chopped green onion , minced garlic and pepper sauce.Drain shells and run cold water over them to stop the cooking process. Divide the chicken mixture into 4 equal portions and fill the shells.Spread another 1/4 c. salsa in an 8" x 8" baking dish that you have coated with cooking spray. Place stuffed shells in the dish. Pour remaining salsa over top to the stuffed shells. Cover and bake at 400? for 20 minutes.
