Drain and rinse, then cover with 2 inches of water, bring to a boil, then reduce to a simmer.While the posole is simmering, warm the oil in a pan and brown the meat on both sides. Remove meat then add onion to the pan with 2 Tbsp of water. Cook until the onion is browned and there is no more water in the pan. Add the meat and the onion to the posole, add more water if needed.
