1 lb dried posole
5 oz turkey breast, chopped into small pieces
1 tbsp canola oil
1 whole onion, chopped
1 Tbsp cumin
1 can green chilis
1 Tbsp red chili powder (from New Mexico)
.5 cup cilantro, roughly chopped
salt and pepper to taste


How Do I Make New Mexican Posole?

Here is how you make New Mexican Posole:

Sort the posole, rinse and soak for 1 hour. Drain and rinse, then cover with 2 inches of water, bring to a boil, then reduce to a simmer.While the posole is simmering, warm the oil in a pan and brown the meat on both sides. Remove meat then add onion to the pan with 2 Tbsp of water. Cook until the onion is browned and there is no more water in the pan. Add the meat and the onion to the posole, add more water if needed. (You can also add chicken broth.) Add the seasonings. Continue to simmer the posole for a total of 2 hours - the posole will "pop" from the husk when it is cooked.Makes 8 1/2 cup servings.
