Here is how you make Mexican mishmash:

Chop sweet potato, onion, pepper and avocado. Add a few tablespoons of broth to large saucepan, then add onions and peppers. Saute until soft. Add sweet potatoes, rice, broth, tomatoes and water, and cumin and chili powder. When sweet potatoes are tender and rice is cooked through, add drained and rinsed beans. Heat through, then add corn.
