Makes 8 portions - Bake at 350 degreesBrown turkey, add taco seasoning mix, tomatoes, enchilada sauce, and chiles. Simmer uncovered 10-15 minutes. Combine ricotta with egg. Spread half the meat mixture in the bottom of a casserole dish. Top with half of the tortillas. Spread half of the ricotta mixture over the tortillas and top with half of the cheddar cheese. Spread remaining tortilla slices and spread with remaining ricotta mixture and cheddar cheese. Cover with remaining meat sauce and all of the jack cheese. Cover and bake for 30 minutes. Remove lid and bake another 10-15 minutes. Let stand 15 minutes before cutting. Number of Servings: 8
