2 tbsp butter
2 tbsp white flour
1 cup 2% milk
3.5 oz low-fat feta cheese, crumbled
1 oz Parmesan Cheese (grated)

Here is how you make Nikke's Moussaka:

1) Wash eggplants and trim off stems. Cut eggplant crosswise into 1/2-inch slices. Put slices in a large bowl or on a tray, sprinkle liberally with sea salt and let them sit for 30 minutes. Rinse well, drain, and pat dry. grill until soft.2) Brown ground turkey with onion and garlic in 1/2 Tbs olive oil.3) When brown, add tomato sauce, tomato paste, red wine and all the spices. Let simmer for 15 minutes.4) Layer it in an 9x9 casserole that has been rubbed with remaining 1/2 Tbsp oilve oil. Add the meat mixture, then the eggplant, ending with meat mixture.5) Add butter to a clean saucepan, stir in flour, stirring until it bubbles. Add the milk, stirring until sauce thickens. Add feta and Parmesan cheese. Pour white sauce over the casserole.
