Heat tbsp of butter in a medium-sized sauce pan over medium to medium-high heat.2. Once it begins to bubble, add mushrooms and red onions.3. After mushrooms brown and onions start to become transluscent (~3-5 minutes), add garlic. Cook for 1 minute or until garlic begins to brown.4. Pour in chicken broth. Add any seasoning you like (red pepper flakes, pepper, etc.)5. Turn heat to high.6. Once broth begins to boil, remove from heat and stir in dry couscous.7. Cover and let sit (off of the heat) for ~5-8 minutes, until broth is absorbed and couscous is fluffy.8. Stir and enjoy! Serving size is ~ 1/2 cup (cooked), serves 4-5.
