My neighbor taught me this recipe. It has become one of my favorties. You can switch the veggies around a bit. We usually add mushrooms and green onions. The chili garlic sauce I use is called Tuong Ot Toi Vietnam chili garlic sauce by Huy Fong Foods inc.. It can be bought at most Chinese Markets.

The ingredients for Singapore Noodles are:

1 cup rice
1lb chicken breast, cubed
1 tbsp vinegar
1 tbsp soy sauce
salt & pepper to taste
1lb spaghetti noodles (or other pasta of your choosing)
8 cloves garlic, chopped
1/4 head cabbage, shredded
3 carrots, shredded
1/4 cup soy sauce
1/8 cup worchestershire sauce

Topping:
1 1/2 cups Kraft Olive Oil Mayo (tastes better with reg mayo but way more fat)
2-4 tbsp chili garlic sauce (depends on how spicy you want it)


How Do I Make Singapore Noodles?

Here is how you make Singapore Noodles:

1. Cook basmati rice according to directions.2. Marinate chicken in the 1 tbsp vinegar, 1 tbsp soy sauce, salt & pepper3. Cook spaghetti noodles until al-dente, set aside.4. Steam marinated chicken with leftover sauce over low heat in a frying pan until cooked through.5. In a small frying pan, , saute garlic until golden, set aside.6. In a large stir-fry pan, saute carrots and cabbage for 5 minutes. Add a dash of salt & pepper to taste.7. Add chicken, spaghetti noodles, soy sauce, and worchestershire sauce to stir-fry veggies, toss together.8. Check flavor and add any additional amounts to your liking.9. Spread the rice in the bottom of an 11x13 baking dish.10. Add the noodle mixture on top and spread out evenly.11. Sprinkle garlic over the top.12. Prepare the topping by mixing together the mayo and chili garlic sauce.13. Spread the topping over the top of the noodles and garlic.14.
