I have been fiending for beef stroganoff, but the typical ingredients (sour cream, egg noodles, etc) make it difficult to make. So, this is my lower-calorie take. It is still not completely low-calorie, but it's a lot better!Also, please note that this recipe is based off the ingredient quantities I actually used. Caloric variations occur, especially when using different brands of broth/noodles. I wrote the recipe as a four-serving recipe. That may have been overly generous. (See 'tips' below.)

The ingredients for Low-cal Stroganoff on Yolk-Free Noodles are:

1.1 lbs beef (cut for stir-frying)
1 lb fresh mushrooms, sliced
1 cup onion, diced
12 oz dry yolk-free egg noodles (I used Fresh & Easy brand)
3 tbsp butter
3 tbsp flour (using a superfine flour is easier)
5 oz sake
1.25 cup beef broth (also Fresh & Easy brand)
3 tbsp half and half
1 tsp garlic, minced
Salt & pepper to taste


How Do I Make Low-cal Stroganoff on Yolk-Free Noodles?

Here is how you make Low-cal Stroganoff on Yolk-Free Noodles:

Cook noodles as per manufacturer's instructions.In a large, deep pan, brown the meat with about half the garlic and then set aside, leaving pan juices in pan. Add remainder of garlic, as well as the onion and about half of the sake. Cook the onion for 2-3 minutes, then add the mushrooms. Cook down the mushrooms until they are half of their volume, and then remove liquid, mushrooms and onions into the same container that you put the beef into to keep the beef moist.In the same pan, melt the butter, and then add the flour slowly to make a roux. Add remainder of sake slowly while whisking, and then equally slowly add the beef broth and half and half to make a sauce. Add salt and pepper to taste, then return onion/beef/mushrooms to the pan and simmer until nice and thick. Add cooked noodles, mix well, and serve.Serving Size:?Makes four large servings.
