Make pastry by rubbing the margarine into the flour and then adding the water and oil at once. Leave to rest in the fridge for a while (it is easier to roll when rested and doesn't shrink in the cooking).2. While the pastry is resting, put the sliced onions in a pan with a tablespoon olive oil and cook until caramelised. This takes about 30 minutes. Stir occasionally to stop sticking.3. Roll the pastry out thinly and line an 8" deep flan dish with it. Bake blind for 15 minutes at 210?C. Cool slightly.4. Whisk the eggs and milk together with any seasoning, beating well.5.
