Here is how you make Balsamic Dijon Orange Roughy:

Preheat oven to 400 degrees.Place fish fillet on large piece of aluminum foil set on top of baking pan. Mix together the mustard, balsamic vinegar and olive oil and spread over top of fish. Sprinkle with salt and pepper to taste. Fold foil up loosely into baking packet.Bake in 400 degree oven. Cooking time may vary depending on thickness of fillet and whether fish is fresh or frozen. (I baked it for 10 minutes for a frozen fillet.)Serves 2 (4 oz portions)Optional variations:Try different types of fish filletsTop with...
