Break cauliflower into tiny pieces - about 6 cups. Toss with oil and .5 t salt and roast in cast-iron skillet about 20-30 minutes - stir a few times. Scoop out cooked pasta and add it (draining it) to skilled. Stir in Parmigiana cheese and smoke gouda (or cheddar) taste, add salt as need. Top with brad crumbs. Return skilled to over. Bake until cheese is melted and bubbling and breadcrumbs are brown, 15 -20 minutes.
