1/2 cup chopped onion

6 ounces prosciutto, sliced into thin strips
1 T butter
1 can (12 ounces) fat free evaporated milk
4 ounces neufchatel cheese
4 ounces hard Parmesan cheese, grated
2 cups frozen peas
2 cans Bumblebee Tiny Shrimp (4 ounces each), drained

Soften Neufchatel cheese, or take out early and bring to room temperature.Bring a large pot of water to boil for pasta.When boiling, cook pasta per package direction. Pre-cook peas or add to pasta water in the last 3-5 minutes of cooking.In the meantime, in a separate pan, cook prosciutto until almost crisp, remove from pan and set aside.Next, in the same pan, saut? onion and garlic in butter until tender. Add evaporated milk and Neufchatel cheese to the pan, whisking until smooth. (If you want a thicker sauce, mix some of the evaporated milk with 1 T of corn starch before adding to pan OR do what I do - stir the cornstarch into the onions and garlic when you're done saut?ing them.) Bring to a low boil, and then add parmesan cheese. Turn off the heat and continue whisking until cheese is melted. Remove pan from heat.When pasta is done cooking, drain it but don't rinse. Return to the pasta cooking pan and combine with sauce, peas (if cooked separately from the pasta,) prosciutto, and shrimp. Add salt &/or pepper to taste.We like lots of freshly ground pepper with this!Serving Size:?Makes 8 and a half 1 cup servings
