1 tsp olive oil
2 cloves garlic, chopped
1 1/2 cups baby spinach, chopped
salt and fresh pepper to taste

Here is how you make Spinach and Sausage Baked Pasta:

1. Preheat the oven to 375 degrees. Lightly spray a 9x13 baking dish with cooking spray and set aside. 2. Bring a large pot of lightly salted water to a boil. Cook pasta according to package instructions for al dente 4 minutes, these need to be under cooked as they will finish cooking in the oven. Drain and return to pot.3. In a medium bowl, combine the ricotta, 6 Tbsp of Parmesan cheese and half of the mozzarella cheese.4. Meanwhile, in a large skillet add the oil and saute garlic one minute, careful not to burn. Add spinach and season with a little salt and pepper and cook one more minute. Add the cooked sausage to the skillet and add the marinara sauce; cook on low about 3 - 4 minutes.5. Put half the pasta into the baking dish and top with half of the sauce. Spoon the ricotta mixture on top of the sauce in an even layer. Cover with the remaining pasta and the remaining sauce. Top with the remaining mozzarella and Parmesan cheese and cover tightly with foil6. Bake for 20 minutes.
