Cook the pasta al dente. Reserve about a cup of the cooking water before draining the apsta and setting it aside. Once the pasta is drained, in the same pot, cook the bacon until the fat is rendered and the bacon is about half-cooked. Add the shallots and saute over medium heat until tender and fragrant, 2-3 mins. Add the olive oil and the chard. Saute until the chard wilts. If it seems too dry, add a few tablespoons of the reserved pasta water. Add the garlic and saute until it is aromatic, 1-2 mins.. In a large bowl, add the chard mixture to the pasta and toss to combine. In the same pot, heat the goat cheese with 1/2 cup pasta water until it is creamy, then toss with the pasta. Use the remaining pata water if you want a saucier consistency.
