Here is how you make Bell Pepper Enchilada's:

Brown ground turkey in a frying pan with olive oil, spices and taco seasoning. Stir bread crumbs and 1 1/2 cups cheddar cheese and cream cheese (optional for an extra creamy addition) in a mixing bowl. Cut bell peppers in half and stuff with turkey filling and place snugly into a 9x11 inch baking dish and pour can of rotel and enchalada sauce evenly over peppers.
