Chop onions, peppers and carrots into bite size pieces.2. Heat olive oil and fry the onions with out colouring3. Add peppers and garlic, fry for a few mins then add carrots and fry for another 5 mins only lightly colouring.4. Add tomatoe puree and cook off for 1 minute5. Add tin tomatoes, stock cube and thyme and two tins of water6. Cook for 15 mins on a medium - high heat to reduce the stock and season with salt and pepper.I don't tend to use salt in this as the stock cube normally seasons it enough but you might need just a pinch more.
