Add beef strips and toss to blend. I usually use a gallon sized Ziploc freezer bag. Let stand for 30 minutes at room temp.In the meantime, prepare the vegetables.In a large frying pan (or wok), heat the remaining oil.Dump the bag of beef in and toss over high heat until meat is evenly browned. Taste meat, and if it's not tender enough add a little water and simmer at medium heat for as much as 20 minutes. Remove meat.Turn heat back up if needed and add all the vegetables except the tomatoes. Toss until tender crisp, about 8-10 minutes. Add meat back to pan.Mix cornstarch and water then add to the pan.
