Swanson's low sodium beef broth 1 T. tomato paste 2 lbs. red potato, diced 4 T. unsalted butter 1/2 t. salt 1/4 t. pepper 4 oz. grated sharp cheddar How Do I Make Cottage Pie?Here is how you make Cottage Pie: Cook onion in olive oil in a large frying pan over high heat until transparent. Add carrots, lower heat, and cook until carrots are soft. Remove vegetables, turn heat up, and brown meat. Return vegetables to pan with meat and add salt, pepper, thyme, parsley, cinnamon and flour. Gradually add beef broth and tomato paste, lower heat, COVER, and simmer 30 minutes. MEANWHILE boil potato chunks until soft, drain, and put through ricer. Gently stir in butter, salt, and pepper. When meat filling is cooked, spread it in a 9x13 baking dish and top with potatoes. Sprinkle grated cheddar on top. Bake at 400 degrees for 25 minutes.
