1 tbs olive oil
2 medium onions, chopped
1 lb ground turkey
1 bunch parsley, chopped - about 1/2 cup
1/4 cup sliced unsalted almonds (or pine nuts)
1 tbs cinnamon
1/4 tsp allspice
black pepper
Cooking spray
2 cups chicken broth (preferably home-made)
4 large eggs
6 sheets of matzah


How Do I Make Mina (Matzah Pie)?

Here is how you make Mina (Matzah Pie):

Caramelize onions in olive oil in a heavy bottomed pot over med-high heat. Add ground turkey, cinnamon, allspice, and black pepper. Brown and separate the ground turkey, until no longer pink and has formed crumbles. Allow to cool slightly, then mix in chopped parsley, almonds and two eggs.Spray pyrex baking dish with cooking spray. Warm broth slightly. Briefly soak 2 matzah in the broth, then lay on the bottom of the baking disk to form a solid layer. Cover with 1/2 the filling mixture. Soak another 2 matzah and place on top of the filling. Add the remaining filling. Soak the last matzah in broth and place on top. Depending on the size of your pan, you may need more than 6 matzah.Lightly beat the last 2 eggs into the remaining broth (approximately 1/2 cup). Pour over top of the matzah.
