Summer Squash, 0.5 cup, sliced
*Peppers, sweet, red, fresh, 0.5 cup, chopped
Pie crust, frozen, ready-to-bake, 2 crust, single 9"
Scrambled Egg, 3 large
Ham, extra lean, (5% fat), 1 cup, diced
Asparagus, fresh, 8 spear, small (5" long or less)
Broccoli, cooked, 1 cup, chopped
Brussels sprouts, cooked, 4 sprout
Onions, raw, 1 tbsp chopped
Zucchini, 0.5 cup, sliced
cheese, marble jack, crystal farms, 8 oz


How Do I Make Summer Ham Pie?

Here is how you make Summer Ham Pie:

1) Pre-heat the oven to 350 degrees. Spray pan with something (depending on what you use, Pam, Olive Oil, etc,) and coat with something (Whole sprout flour, Whole Wheat Flour, cracker crumbs, etc,) to keep the pie crust from sticking to the pan. 2) Place one pie crust in the pan. Fork lightly around bottom and sides.3) Scramble eggs in a large mixing dish. Lightly rub a little of the egg over the pie crust just to coat the crust.4) Cut all vegetables EXCEPT Asparagus, into small bite size pieces and add to bowl with eggs. 5) Cut Ham into small bite size pieces and add to bowl.6) Mix #4 and #5 together well.7) Add cheese and mix well.8) Place mixture in the pie crust, flatten out to make it evenly in the pan.9) Cut Asparagus in three or four pieces each. Place neatly around the top of the mixture. So that they are evenly placed covering the complete top of the pie.10) Add the top pie crust. press edges together to form a seal around the pie.11) Fork the top of the crust four or five times, use a butter knife and make smiles out of the fork holes. ( This is for venting purposes.)12) Bake on 350 degrees until brown and fork goes thru the broccoli.Serving Size: I used a square 9X9X4 pan and cut it into 4 equal serving sizes.Number of Servings: 4Recipe submitted by SparkPeople user GMANION.
