Brush yolk mixture on pie crust and bake 1-2 minutes more. For filling: Spinach- either fresh or frozen equaling 3 cups, fully drained. 1/2 block cream cheese (out of an 8oz. block) 3-4 oz. cheddar cheese 1 tsp basil 1 tsp salt 1/2 tsp pepper 1 egg plus 1 egg white 2 fresh tomatoes, cut into slices 2 tsp basil 2-3 oz. cheddar cheese Cook down fresh spinach or thaw frozen spinach in a 2 quart saucepan. Add cream cheese and cheddar and mix until partially melted. Add spices. Take off stove and mix in eggs. Add to baked pie shell. Cut tomatoes into slices and dip on both sides with basil. Arrange on top of the pie. Sprinkle with shredded cheese. Cover in aluminum foil. Bake at 350 for 30 minutes. Remove foil and bake for an additional 30 minutes until bubbly and cheese is melted. Pull out of the oven and let sit for 5-10 minutes. Makes 6-8 servings.
