I was craving pot pie, and this was the result! Full of cabbage, potatoes, onions, mushrooms, and carrots, I decided to call it the Irish Pot Pie. Preheat oven to 425. Cut all vegetables and place in a saute pan sprayed with cooking spray over medium heat. Saute till onions are cooked, mushrooms have released their moisture, and other vegetables begin to soften. 2. To make the gravy, melt coconut oil in a sauce pan over low heat. Add flour and whisk to combine. Continue whisking for about a minute to cook the flour taste out, then slowly whisk in milk. Whisk in spices and continue whisking frequently over low heat till sauce thickens. 3. Divide vegetables between two small baking dishes or ramekins. Pour half the gravy over each dish. 4. Make pie crust by cutting very cold butter into flour with a pastry cutter. When it is completely cut in, stir in the ice cold water. Do not over work the dough. Turn onto a well floured surface, divide into two pie crusts, and press into rounds that will fit your dishes. 5. Place crusts on top of dishes and tuck in the edges. Cut an "X" in the top of each to vent the steam. 6. Place ramekins on a baking sheet in case of spills and bake in a 425 degree oven for 25 minutes.
